The origin of Singapore noodles seems to be a mystery as I didn’t once see it in Singapore. Much like the origin of Peking duck is not Beijing (the name of which they couldn’t properly pronounce so Beijing became Peking) but it seems to be Malaysia.
Today’s example is brought to you by Vietnamese/Chinese so is probably very far from authentic (if it’s possible for there to be an ‘authentic’ version of this dish). It seems to lack the curry/turmeric powder that is popular in some other renditions of this dish.
