Bread salad

Due to dietary requirements, this can’t really be called a ‘Tuscan’ bread salad, aka Panzanella because tomato is to feature prominently in said salad however this is my interpretation after being inspired by an episode of Jamie’s 30 minute meals…

Baby spinach, toasted fennel seed, garlic and olive oil ciabatta croutons, roasted pumpkin and sweet potato, the odd roasted capsicum, eggplant and olive cheek hiding somewhere. Dressed with good extra virgin olive oil and balsamic vinegar.

Amateurishly prepared by me (and it took me longer than 30 minutes)
